Roast Beef Topside with English Mustard
Cooking Guide
- Pre-heat oven to 210c (fan). Place joint on a roasting tray on a bed of roughly chopped onion, carrot, celery & thyme.
- Season the joint liberally with a generous slathering of English mustard, salt and pepper to create the most delicious crust!
- Roast for 25 minutes then reduce the temperature to 160c and roast for 15 minutes per 500g until a core temperature of 54c is reached.
- Remove from the oven and place on a plate, cover with foil and leave to rest for at least 20 minutes.
