Festive Glazed Ham with Spiced Orange
This is without doubt a Christmas classic! This Festive Glazed Ham with Spiced Orange recipe is perfect to eat with your Christmas dinner and then greedily slice off chunks for the all important Boxing Day sandwich! Left overs are also fantastic in pea and ham soup and would be amazing in a hearty turkey and ham pie!
You will need.
Gammon joint, size to suit.
For the Glaze.
2 medium sized oranges.
Dash of orange liquor.
Half a jar of honey.
Cinnamon Stick.
Grated nutmeg to taste.
6 Cloves.
You can make the glaze the day before and stand in the fridge to really allow the flavours to develop.
Cut 6 fairly thin slices of orange from the centre of the oranges 3 from each and juice the remainder of the oranges.
Add the honey, orange liquor and orange juice to a small sauce pan over a low heat stir till the honey melts then add the nutmeg, freshly grated is best and stir in. Now add the cinnamon, cloves and orange slices, allow to simmer gently for about 10 mins and allow to cool then remove the cinnamon stick.
Roasting the Gammon.
These cooking times are perfect for a 5lb (2.5kg) joint.
Pre heat the oven to 240c or gas mark 9 ,wrap the joint in cooking foil and place in the oven on a roasting tin, after about 25 minutes turn the heat down to 180c or gas mark 4 and cook on for 2 hours.
Allow to cool a little then carefully remove the soft rind leaving the layer of fat on the joint; now gently score a diamond pattern onto the fat with a sharp knife.
Arrange the orange slices on the joint and pin with the cloves.
Place the joint onto a roasting tray and baste with the glaze, return the joint to the oven baste as the fat crisps and the joint turns a golden colour.
Serve hot or cold, if hot allow to rest for 30 minutes out of the oven before carving .
